The 2nd International Symposium on Lipid Oxidation and Antioxidants by Euro Fed Lipid, took place in Graz from 4 to 6 June 2018.The symposium took place at the Karl-Franz-University Graz, which was founded in 1585 and is the second oldest university in Austria. Graz has a long tradition as the seat of universities: The six universities have more than 44,000 students.This meeting was a great opportunity to discuss theoretical aspects of lipid oxidation as well as recent findings and applications of lipid oxidation prevention. Discussions about scientific and technological developments inlipid oxidation and antioxidants in six sessions covering
- antioxidant and lipid oxidation evaluation methods
- elucidation of lipid oxidation and antioxidant mechanisms
- lipid oxidation in multiphase and complex systems
- control of lipid oxidation
- protein and lipid co-oxidation
and
- nutritional and physiological effects of oxidized lipids and antioxidants.
With its rich cultural, historical, architectural and culinary offerings, Graz is an ideal location for a Euro Fed Lipid conference. The city was added to the UNESCO list of World Cultural Heritage Sites in 1999 and the site was extended in 2010 with Eggenberg Palace. The historic centre of Graz is one of the best-preserved city centres in Central Europe. Graz was the Cultural Capital of Europe for 2003 and got the title of a City of Culinary Delights in 2008. And June marks the start of summer, with pleasant temperatures inviting you to discover this vibrant city.
